One of our are looking for a hands-on, reliable, and passionate Head chef. Bringing strong familiarity with Greek and Italian culinary heritage, you will run end-to-end service designing seasonal menus, delivering seamless execution, and connecting directly with guests to bring every dish to life.
Duties and Responsibilities are but not limited to:
- Create, test, and execute seasonal à la carte and multi-course tasting menus that celebrate premium regional ingredients.
- Independently handle end-to-end kitchen operations, from mis-en-place, cooking, and plating to post-service clean-down.
- Act as the host of the culinary experience by connecting with guests, stepping into the dining room during service to introduce signature courses, detail rare ingredients, and bring the story behind each dish to life.
- Build direct relationships with local suppliers, place orders, control stock, and manage food costs, yield, and waste reduction.
- Partner closely with our service lead and sommelier to harmonize food and wine offerings and ensure seamless service flow.
- Maintain impeccable HACCP compliance, food safety protocols, and an exceptionally clean, organized kitchen.
Requirements:
- Proven experience working in high-end, ingredient-driven or fine dining kitchens.
- Fluent proficiency with the English language.
- Deep appreciation or background in Southern European/Coastal cuisines (Southern Italian, Greek, or wider Mediterranean traditions is a must).
- Complete confidence running a service independently from start to finish with speed, composure, and poise.
- A track record of creating refined seasonal tasting menus with precision plating and distinct flavor balance.
- Natural warmth and comfort interacting directly with guests in an open-kitchen setting.
- Strong operational discipline regarding food margins, stock control, and kitchen organization.
