Food & Beverage Cost Controller

  Central Malta  |  up to €35,000 Annually 

Our client operating in the Hospitality industry is looking for a Food & Beverage Cost Controller. The chosen candidate shall report to the Management Accountant and work closely with the Head Chef and Restaurant Manager to provide them with cost of sales information needed to control costs.

Responsibilities:

  • Establishing and administering sound food and beverage cost control systems and procedures to ensure that food and beverage profits are maximized and are consistent with high standards of quality and service
  • Overlooking the food and beverage control procedures and ensuring they are adhered to
  • Working with the Head Chef to coordinate tracking of high-cost items in the food area
  • Working closely with the Restaurant Manager to develop menu pricing of food and beverage items
  • Liaising with purchasing teams and chefs to ensure optimal purchasing and accurate costing of food and beverage
  • Prepare variance analysis reports for food and beverage and communicate same with relevant parties
  • Monitor food and beverage performance through analysis of daily food covers, sales and cost reports
  • Check the daily food and beverage revenues for the accuracy of covers and average bill
  • Continuously study weaknesses in food and beverage controls implemented and provide suggestions for improvements
  • Undertaking monthly stocktakes of all food and beverage stores and costing the said stocktakes
  • Efficient operation of the POS systems including checking and verifying voids, discounts, complimentary sales, discounts, settlements and lost postings
  • Performing ad hoc duties as and when required

Skill-sets and Requirements

  • At least 2 years of experience in a similar role, ideally in the hospitality industry
  • Adaptable and a teamplayer
